Rambutan has half red color, half bright red or half yellow and lots of green “feathers” around the outside. The pulp is sweet and sour, tender, and succulent, but also packed with vitamin C and other nutritional components good for your health. The name rambutan is derived from the Malay word rambutan, which means “hairy” — an apt description for this fruit.

Once peeled, the rambutan fruit is very similar to the lychee and longan fruit. This fruit has a small seed inside.

The flavor of rambutan is a little like grapes with a slight strawberry quality, slightly acidic and sweet. It has a pleasant fragrance and is not as sweet as the lychee and also is a little less acidic.

You can eat fresh rambutan fruit or make juice, salads, jam, pudding and ice creams. Of course, you can enjoy them all year round as they are canned.

You want to know the fruit is ripe or not, look at the color of its spikes. When it is ripe, the spikes will turn red color.  The redder they are, the riper the fruit will be. The green skin means it is unripe and over-ripe if it has a lot of black "hairs".

To open a rambutan, cut the skin with a sharp knife or even use your finger. To do so, slice the middle of the outer skin with a knife, then squeeze from the opposite sides from the cut. The white fruit should pop free.

The sweet, translucent flesh contains a seed in the middle. You can remove the seed with a knife or spat out after eating the flesh.
